Jewish faith goes beyond belief,it is something you inherit because only people born from Jewish parents ,meaning one or both are considered true Jews.It is as much a product of culture/heritage as it is spiritual.
you have answered the question you posed i.e the reason christians dont follow this kosher laws is basically that some of them are jewish culture/customs.
Here are few facts:
-Judaism and christianity are not found in the Bible.
-Satan is mentioned a couple of times in the old testament:

Then he showed me Joshua the high priest standing before the angel of the LORD, and Satan standing at
his right side to accuse him.
1 Chronicles 21:1 Satan rose up against Israel and incited David to take a census of Israel.
Like most of the old testament ,ideas that are portrayed in the text,they are not fully developed.For instance themes such as:
-The role of the jews vs the gentiles
-Eschatology
-life after death.
etc.
are not lucid enough.
This is where the New Testament came in to seal such loops in our understanding.To rival this the talmud and midrashes of this world
multiplied and hence the rise of judaism.Rabbinical judaism.
-Christianity was not made an official religion under constantine but was made a legal religion i.e persecutions were stopped.
The New Testament was written by the jews themselves from the inspiration of Jesus.Go through any concordance and see the numerous references to Old testament(Tanakh) both in thoughts and words.
The two faiths are thus interlocked.Actually in one way christianity can be said to have put jews on the map.Think of all the empires of old the Egyptians, babylonians,the greeks,the persians mentioned in the OT .
Where are they now?They all pale in comparison to the jewish empire which is everywhere from business ,science ,philosophy ,Entertainment etc.

Suppose,someone calls the Police and tells them there is a bomb placed inside parliament.It will not be correct for the police to ask the anonymous caller for more evidence.For the safety of the nation they would rather swing into action and sweep the whole of parliament looking for the bomb.
The point am making is that the burden of proof falls on you to go out there and prove God/Devil doesn't exist.
The spirit world exists otherwise we as humans would have discovered ages ago to be a hoax.The hordes one sees on t.v being healed must be to a large extent real because as humans we quickly identify what works and what doesn't.
These faith healers and sorcerers before they gain prominence they "market"themselves through word of mouth i.e they rely on individuals that can vouch for their expertise and mostly have experienced this spiritual world themselves...
