I have never run a Resturant but i imagine these are important for a succesful resturant business:
1. Operations
- Fresh, good quality, wide variety foods prepared attractively.
- Clean premises, attractively designed, good comfortable furniture, soft music, clean washrooms, ventilated kitchen.
- Polite, friendly and smiling staff and waiters
- Prompt service in taking customer order, providing bill, taking payment, giving change.
2. Employees
- Have their roles defined and aware of what is expected of them - manager, cashiers, chefs, waiters, cleaners
- Train employees, give them uniforms
- Motivate and pay them based on the business perfomance
- Have a policy for all tips to be declared and shared out among all employees
3. Finances
- Keep proper records of receipts and payments
- Put proper controls so that all customers pay and waiters don't pocket cash
- Physical control for supplies like meat, sugar, drinks ie lock and key.
- Bank the cash collected once or twice a day
- Daily reconciliations
- Pay your suppliers personally or through trusted manager
4. Marketing
- Do promotions eg a weekly free meal for one of loyal customers
- Attractive signage, well printed menus,
- Advertisements based on your budget
- Above all think big, open branches, do outside catering and grow.

with several yrs into small business after quiting employment. My Lessons are: biashara ni mwenyewe. U stay there u get the sales, u leave the sales drop. Also theory and practice are two separate worlds in biz, u learn by doing
