Butchery business

Anyone in the butchery business? I need to know these;
• Where can I get reliable supplier
• Fixers and fitting especially displays that double as freezers.
• Margins
• Management tips

@machinani, This is one business that unless you are there full-time forget it. It is full of tricks such that your employees can reap you off. Some tricks includes, excuses that weight has shrunk with time ( when in real sense they have sold it), selling the meat and keeping the money and replenishing the stock before you do stock take so that your stock never moves when in actual sense they use the butchery to sell their own meat etc. A friend once had a butchery and he told me the only gain he made was the ka-quarter he used to carry home in the evening for mama to put in the mboga!

If you manage it yourself, i hear the margins are good if you combine it tayari ( for the meat just about to expire!), soup and bones and leftovers

Some reliable sources are Dagoretti and Kiserian slaughter houses

Mark up for meat products generally ranges from 30-60% depending on supplier and the quantities you purchase. You can get the meat from Burma or Kiamaiko. However there are a couple of independent suppliers who will approach you once you open. Once you talk to them decide whether to trust them or not.

Try build a good reputation from the start... " The butchery of soft/good meat or butchery ya mifupa, butchery ya nyama ngumu, butchery ya nyama fresh '.

Word of mouth and loyalty are absolutely important in this business. And so are the workers.

The average sales of a neighborhood butchery is 14 kg per day. Note this is the average. There are butcheries selling just 5 kg while others sell over 200 kg in a day of course depending on location and a couple of other factors.

Keep it clean, friendly and with a variety of meat products..And hey it will do a lot of good to have a meat mincer.

As for equipment well depending on your budget you can get some at Light Industries or more reliably from some company called Rian services. They provide everything you need from uniforms to refrigerated displays. Get them on 0725399684.

Midland Technologies is another company who make the displays (none refrigerated ) from scratch averaging 70k or s Contact 0722282666... Shop around for the best deal. All the best .
