The odometer will roll over to zero. This is not an unusual phenomenon--on most cars built through the 70s and early 80s, the odometer only went to 99,999. Most cars from the mid 80s on have an odometer that will go to 999,999--so it's less likely you'll exceed the mechanical capability of the odometer.
